There are many different dishes that can be prepared with delicious Swiss chard. These include e.g. Swiss chard soup and Swiss chard pesto. A chard puff pastry quiche also tastes particularly delicious. This hearty cake tastes wonderfully spicy and is still not too heavy. The puff pastry in particular has a very special appeal here. So if you have water in your mouth, you should definitely try the following recipe yourself.
Ingredients (for four people):
- 500 g chard
- 2 tablespoons oil
- 50 g pine nuts
- 1 onion
- 200 ml cream
- 4 eggs
- 100 ml milk (1.5% fat content)
- 100 g mountain cheese
- 1 pack of puff pastry (round)
- 1 pinch of sugar
First wash the chard, pluck the leaves and cut into fine strips. But don't throw away the stems! You can also use them. Simply cut them into small cubes.
Peel the onion and cut it into cubes. Sauté these together with the diced chard stalks, a pinch of sugar and 2 tablespoons of oil. Then add the chard strips and braise everything together again. Now season with pepper, salt and nutmeg.
Roast the 50 g pine nuts in a non-fat pan and then add to the chard mix. Then whisk the milk, cream and eggs together and stir in about 60 g of mountain cheese. Season everything together with pepper, salt and nutmeg.
Now roll out the round puff pastry to the desired size and place in a tart pan. Press the dough lightly on the edges of the form and cut off any excess dough. Then spread the chard mixture on the puff pastry. Pour the egg cream on top. Finally, add 40 g of mountain cheese in a sprinkled form on top.
Preheat the oven to 200 degrees Celsius with top and bottom heat. Then bake the quiche on the bottom of the oven for about 10 minutes and then another 25 minutes on the bottom shelf. Then leave the quiche in the oven until it has a golden brown surface.
